I'm currently trying to convince our monitoring application vendor to include fragmentation reports in their product. There are a few applications that can pull that info from a list of machines. You can even do WMI calls to get fragmentation levels as of server 2003. If we need to change it later on we'll use group policy.
For our Win7 deployment we just changed the scheduled task to occur on workstations over the weekend instead of during the week. XP was the biggest reason we were using diskeeper. We have plenty of 2003 file servers with SAN attached storage that haven't been defragmented since going to production over 3 years ago.

Modern SANs (when properly spec'd out) don't encounter much delay caused by fragmentation. Diskeeper did this in the background on our workstations very well. They changed their name so that they could better market this product to software vendors and OEMs.
Diskeeper also runs in the background.not as a low priority task, but their other software they developed is part of diskeeper that analyzes OS conditions before performing any work. Scheduling, enterprise deployment and management, reporting.all things that you can't easily get. Yes, Diskeeper is better than the average free defrag software.
